Southwest Sauteed Kale

Ingredients
2 cups Kale (appx. 8-10 oz.), chopped 1/3 cup Red Onions, chopped5 cloves Garlic, diced1 Jalapeno Pepper, chopped1 tbsp. Olive OilSalt & Pepper to taste
Directions
Heat olive oil over medium heat, in a skillet or sauce pan. Add the onions, garlic and jalapeno when the oil is hot. Sautee for about 3-4 minutes, stirring as needed to keep from burning. Add the chopped kale and cook for another 3-4 minutes, stirring regularly. Cover, reduce heat to low & let steam for 2-5 minutes (depending on how crunchy or soft you prefer your veggies). When cooked to desired doneness, add salt & pepper to taste & serve.
