Beef tips

Ingredients

1 lb beef tenderloin tips1 medium onion, diced2 cups cremini mushrooms, quartered1/2 c wine4 cups beef broth 8 sprigs fresh thyme(optional)1 bay leafRoux:1/2 stick butter1/4 cup flour
Cook butter & flour together for 5 minutes. should resemble wet sand. you can add mor butter or flour if needed. Make this first & set aside to cool. Do NOT add hot roux to hot stock, you will get lumps.
Sear tenderloin tips in canola oil
add diced onion & cook for 2 minutes
deglaze with wine & reduce for a couple minutes. You want the flavor of the wine, not the volume
add the broth and bring to a boil- & cook for 20 minutes
Saute mushrooms in a separaate pan with a bit of oil and add beef mixture. add chilled roux to desired consistency; should coat the back of a spoon Add salt and fresh pepper, add a shot of worstershire
Serve over brown rice
