Chicken and Black Bean Burritos

Chicken breast (cubed)SalsaLemon juiceMushrooms (sliced)Onion (sliced or chopped)Whole Wheat tortillablack olives
1. Place chicken breast in skillet with salsa, lemon juice, mushrooms and onion and cook on medium high until chicken is cooked and sauce is reduced.
2. While chicken is cooking, heat black beans in microwave on high for 2 minutes until hot.
3. Dice tomatos, any extra onion and slice the black olives.
4. Assemble by placing 1/4 c. black beans in tortilla, along with 1/4 c. chicken mixture, and top with tomato, onion and olives.
Makes 5-8 servings (depending on tortilla size).
Good substitutions are lime juice and any veggies you like (zucchini is great too!). Omit chicken and add more veggies or tofu for a great vegetarian dish.
