Clean Eating Oatmeal Raisin Cookies

Ingredients
Olive Oil spray1/2 cup light olive oil, or your favorite1/2 cup evaporated cane juice1 egg white1/2 tsp pure vanilla3 Tbsp water2 cups old fashioned oats2/3 cup whole wheat flour1/4 tsp salt1/2 tsp baking soda2/3 cup raisins1 tsp cinnamon
Directions
Preheat oven to 350 degrees. Grease baking sheet with olive oil spray. In a bowl, mix oil and evaporated cane juice. Add egg white, vanilla, and water; mix well. Add oats, flour, salt, baking soda, raisins, and cinnamon, and mix until just blended to retain the texture of oats. Drop by spoonfuls onto baking sheet. Bake for 10-15 minutes, or until bottoms are lightly browned.

    These were good! I substituted agave nectar for the evaporated cane juice, and adjusted other ingredients according to results online -- not sure if that's why it falls about so easily or not. They were still good, though! - 5/29/11
