Donna's Balanced Spinach, Chicken & Cheese Manicotti

1 Box Manicotti Shells (12 shells)8 oz. Fat Free Ricotta cheese3 T. Parmesan cheese2/3 C. 2% Mozzarella, shredded finely1 10 oz boxes frozen spinach, thawed and drained.1 lb. Chicken Breast, cooked and diced1/4 cup chopped onion4 12 oz. Cans Cento Tomato Sauce1 8 oz boneless chicken breast- cooked & chopped1 Tbsp Italian seasoningPam Olive OIl
Saute onions in a quick shot of Pam Olive Oil spray.
Combine onions, diced chicken, ricotta cheese, parm cheese and 1/2 C. of Mozzarella cheese and italian seasoning. Mix until blended well
Stuff uncooked manicotti shells with mixture and place in baking dish. Cover with 4 cans of tomato sauce (If I have to use canned, I used Cento).
Cook at 375 for 1 hour, or until pasta is tender. Top dish with remaining 1/4 C. of mozzarella.
