Ingredients
2 red ripe tomatoes- chopped1 small yellow onion-chopped2 jalapeno peppers-seeded and chopped1 large cucumber with skin-choppedapprox. 1/2 cup lemon juicesalt and pepper to taste
Directions
Take all chopped veggies and mix them together in a bowl. Next add lemon juice and salt and pepper and mix well coating all veggies. Marinate as long as you wish but I find that it tastes the best after about 3 hours. Eat and enjoy on tacos, rice, potatoes, or on its own. Please let me know what you think.

    I love this recipe and make it a lot in the summer with my own tomatoes, peppers and cucumbers. I also put virgin olive oil or Italian dressing on it and cilantro. - 7/24/09

    I make this all the time and it is amazing. I drizzle a little bit of extra virgin olive oil on it too though. Sometimes I even through in a can of black beans if I am eating it alone as a meal. Delish !!! - 6/24/09
