A-L's Modified Curried Lentils with Brown Rice

Ingredients
* Onions, raw, 1 cup, chopped * Garlic, 5 cloves * Carrots, raw, 1 cup, grated * Olive Oil, 1 tsp * Curry powder, 2 tbsp * Pepper, red or cayenne, .5 tsp * Lentils, 1 cup * *Brown Rice, long grain, 1 cup * Chicken Broth, 4 cup (8 fl oz)
Directions
Saute onions, carrots and garlic in a medium saucepan until onions are tender but not brown. Stir in salt cayenne, and curry powder and cook for 1 minute. Add lentils, rice and chicken broth. Bring to a boil. Lower heat and put a lid on it. Let simmer until rice is tender.

Makes 7 1-cup servings.
