Oven Fried Eggplant

1 large Eggplant, slicedSalt, 2 tspPepper, black, 1 tspButtermilk, lowfat, 1.5 cupPaprika, 1 tsp All purpose Flour 1 cupCreole Seasoning, 3 tspPanko Bread Crumbs, 2 cup
Preheat oven to 400.
Cut eggplant into 1/4 inch slices. Spinkle with salt and pepper. Pour buttermillk into shallow dish. Stir together panko, creole seasoning, and paprika. Dredge eggplant in flour. Dip in buttermilk, and dredge in panko mixture. Bake at 400 for 18 to 20 minutes or until golden brown, turning once after 10 minutes.

Yeah, I agree too much sodium to make on any regular basis. I mainly entered it in because my wife made it and I wanted an easy way to put it in our calorie counter. You could probably tinker with it to make it a little better.
