Heart Smart Bisquick Blueberry fluffycakes

Ingredients

Soy milk, Soy Milk, Natural, .66 servingEgg white, 2 serving Heart Smart Bisquick (mix only), 1 cup Blueberries, fresh, 141.7 grams or 6 oz.
Preheat a frying pan on stovetop burner to medium heat.
Whisk all ingredients except blueberries until blended.
Fold in blueberries.Spray pan with Omega cooking spray. Using an Oriental soup spoon, pour two spoonful/pancake. Cook until tiny bubbles start to show through pancake,use spatula to check in underside is browning, if it is, then spray top with spray then flip and brown other side.
Move to a plate once finished, lightly brush butter on top to keep from getting overly dry.
Serve it up!
