Low Fat Low Sugar Cheesecake

Filling:2 eggs2 tsp. vanilla1 1/2 c. fat free sour cream1/2 c. splenda16 oz. fat free cream cheese, softenedCrust:1 c. crunchy, high-fiber, low-sugar cereal (like Grapenuts)2 T. I can't believe it's not butter, melted
In a large bowl, blend together eggs, vanilla, sour cream and splenda. Slowly add cream cheese.
Crush cereal until it is fine crumbs. Mix cereal and melted butter. Spread this mixture into the bottom of 10" pie pan or spring form pan.
Spread the cream cheese mixture evenly on top of crust.
Bake in 350 degree oven for 35-40 min. Cheesecake will firm up when refrigerated. Makes 12 servings.
Can be topped with fresh strawberries and sugar free cool hip if desired. (Not included in calorie count)
