Banana-Flax Muffins

Ingredients
1/2 c flax meal1/2 whole wheat flour1/2 cup wheat germ3 tsp baking powder1 tsp baking soda1/2 tsp salt1 egg4 ripe bananas3/4 unsweetened applesauce1/2 cup sugar2 Tbsp melted margarine
Directions
Mix wet ingredients in large bowl. Sift dry ingredients in another bowl. Add all together and mix well. Divide into 12 muffin cups and bake for about 20 minutes at 350 degrees or until done.

    Excellent! I was out of wheat germ and used oat bran instead. Still came out good - next time I'll try the wheat germ. I baked these at 350 which worked. (oven temp not listed) - 1/22/08
