Healthier Taco Casserole

1 1/2 lbs. Ground turkey1 medium onion, chopped1/2 tsp. fresh garlic, chopped1 can Healthy Choice Cream of Mushroom Soup1 can Enchilada Sauce1 (15 oz) can RANCH STYLE BEANS1 large bag Nacho Cheese Doritos1 Large bag Low Fat Mexican Blend Cheese
Brown meat with chopped onion & garlic. Add soup, enchilada sauce, beans & mix; heat until bubbly & heated through. Layer as follows in a 9 x 13 or casserole dish: Doritos, slightly crushed (just enough to cover bottom of pan, 1/2 of the meat mixture, 1/2 of the cheese, then repeat the layer, ending with the remainder of the cheese. Bake at 350 degrees for about 20 minutes. Let rest for 5 to 10 minutes before cutting.

I ate this for lunch today & it was very good. I could not find Ranch Beans so I used pinto beans & I used Baked Doritos for fewer calories. Overall a good meal. - 6/29/09

s/getBrand.do?page=ranch_style; they have spices that will add to the flavor. Since I do not know where you live they may not be available to you. Good luck in locating them.
