Chicken Divan

2 skinless, boneless chicken breasts2 c. chopped broccoli1 can Healthy Request Cream of Chicken soup1/2 c. fat free sour cream1/2 c. fat free milk1 tsp. curry powder1 tsp. saltpepper - to taste1 c. reduced fat cheddar cheese, shredded1/4 c. french fried onion toppingRice - not calculated in calories
1. Preheat oven to 350.
2. Cut chicken breast into bite-sizes pieces. Cook in skillet until done. You can also boil the whole breast and then shred them.
3. Steam broccoli until crisp - about 3 minutes in the microwave.
4. Combine soup, sour cream, milk, curry, salt and pepper in a bowl. Whisk until smooth.
5. Spray a casserole dish with cooking spray. Layer with 1/2 the chicken, 1/2 the broccoli, 1/2 the soup mix & 1/2 the cheese. Repeat with the remaining ingredients.
6. Top with the french fried onions & bake for 30-45 minutes until bubbly.
7. Serve with cooked rice.
