Ingredients
1 red pepper, seeded and finely diced1 English cucumber, finely diced (or 1/2 depending on size and preference)2 large tomatoes, seeded and finely diced1 jalapeno, finely diced1 tablespoons olive oil2 tablespoons balsamic vinegar1 teaspoon dried oreganoSaltFreshly ground black pepper
Directions
Dice the ingredients. Add the oil and vinegar and voila! Makes 3 3/4 cup servings.

    Actually, I did add a jalapeno!! I added it for the nutritional data but forgot to type it in the ingredient list...wish we didn't have to do that!
