Cucumber & Pineapple Salad

Ingredients
Pineapple Chunks (canned or fresh) If canned make sure it is in it's own juice 1 cupCucumber chunks 1 cupScallion (green onion) 1/4 cupBalsamic Vinegar 1 tbsp or to taste
Directions
1. Peel fresh pineapple and cut into chunks.
2. Peel cucumber and cut into chucks. (remove seeds if desired).
3. Chop green onions.

Mix all ingredients together, add balsamic vinegar and stir together. Can be eaten right away, however it is best chilled.

Makes 4 4oz servings as a snack or 2 1-cup servings as a side dish.
