Cottage Cheese Pancakes

Ingredients
1/2 cup Cottage Cheese (I used Breakstones 2%)1 large Egg2 Tablespoons Whole Wheat Flour (I used Arrowhead Mills Multigrain Pancake Mix)
Directions
Blend ingredients in food processor. Spray pan with non-stick spray. Cook on low till bubbles appear, flip. Cook till done.

Serve with SF Maple Syrup - not included in calorie count (or plain!)

Makes 4 small pancakes or 8 silver dollar size.

    Add some blueberries and you don't even need syrup. Add a little baking powder if you want it to "rise" more. - 7/22/11
