Lemon-Blueberry Sorbet

Ingredients

1 cup sugar1 cup water1 cup lemon juice1/2 cup fresh blueberries
Add the water and sugar to a small saucepan and stir over medium heat until the sugar is fully dissolved. Add the blueberries and cook another 3-4 minutes until the berries are soft and the mixture is a purplish colour.
Remove from heat and stir in lemon juice.
Put mixture into the refrigerator and cool for an hour or so.
Prepare mixture in an ice cream machine according to instructions. If you don't have a machine, you can pour it into a shallow dish and freeze for about an hour. Take it out and scrape it all loose with a fork, then freeze again until solid. Run it through a blender or food processor to get a smooth consistency.
Makes 8 servings, about half a cup each.
