Ingredients
1 1/2 cup dry rinsed lentils1 medium chopped onion3 minced garlic cloves3 cups chopped fresh beet greens4 cups chicken broth (or vegetable broth if you want to go vegan)cooking spray1/2 tsp salt1/2 tsp black pepper2 tbsp fresh chopped sage (or 1 tsp dry)
Directions
Spray medium sized pot with cooking spray; saute onion for 3 minutes to soften; add garlic and saute for 1 more minute. Add chicken broth and lentils. Bring to a boil; cover and simmer for 25 minutes. Add chopped beet greens and cook for 5 minutes longer. Add salt and pepper and fresh sage. Serving size is 5 based on 1/4 cup raw lentils per serving so each serving will be about 3/4 cup or so.
