Maple & Brown Sugar Oatmeal Bake

Brown Sugar, .33 cup, packed Smart Balance Light Buttery Spread, 2 TbspEgg, fresh, 1 large Milk, nonfat, 2 cup Oat meal - Quaker quick, 1.5 cup Baking Powder, 1.5 tsp Salt, .5 tsp Maple Syrup, .25 cup
1. Preheat the oven to 350ºF. Lightly oil or coat an 8 X 8-inch baking pan with nonstick cooking spray and set aside.
2. In a large bowl, whisk together the brown sugar and the butter until well combined. Whisk in the egg until creamy and then whisk in the milk.
3. Stir in the oatmeal, baking powder, salt, and maple syrup. Place the mixture evenly in the pan and bake about 30 minutes, until the top turns golden and the oatmeal is set. Scoop out and serve warm.

I made this and it was GREAT! I did substitute Vanilla Soy Milk and Egg Beaters to make it a little healthier. - 6/27/09

I'm glad you liked it. I considered using unsweeted vanilla almond milk and egg beaters, but I was scared it wouldn't be good. I'll have to try it and see how I like it. That would take the calories down some.
