Coconut Waffles

Ingredients
Directions
1 cup coconut flour1/2 cup rolled oats blended to make oat flour1/4 cup tapioca flourpinch of salt 2 tbsps sugar2 tsps baking powder1 cup soy milk1 tbsp oil1 egg1 tsp vanilla extract1/4 cup water (optional)
Mix dry ingredients. Mix wet ingredients. Blend together. You can do this in a food processor for a faster prep time.
Preheat a waffle iron and lightly grease grids. Pour batter on waffle iron and cook until lightly browned and waffles pull out of the iron easily.
Serve with cottage creme (recipe on Spark) sliced berries, bananas or other fruit and a drizzle of honey or maple syrup...Yummo delcious and decadent!
