Garlic and Tomato Tilapia

Dice and seed tomato you will need 1CupFour cloves of garlic to taste (Less if preffered)5 Tbsp of sour creamSalt and pepper to taseTsp of BasilTwo Tilapia filets
Pre heat oven to 325 degrees
(I use toaster oven in the summertime)
In a medium bowl mash together the garlic, Basil and tomato. Stir in th sour cream and season with salt and pepper. Plase the fish filets in shallow baking dish.
Bake fish for 10 minutes or untill about halfway done. Remove from the oven and pour the tomato sauce over it. Return to the oven for 10 more minutes, or untl fish flakes easily with a fork.

I also added olive oil before baking and sprinkled with oregano and salt and pepper with the basil. Then I heated a drained can of diced tomatoes with 2 tsp. of minced garlic and added sour cream right before adding it to the fish. Very versatile basic recipe! Good with Orzo or AngelHair! - 6/3/11
