Dee's Zucchini Bread

Ingredients
3 eggs7/8 c. vegetable oil1 1/2 c. sugar2 c. grated zucchini2 t. vanilla2 c. whole wheat flour1 c. white flour3 t. cinnamon1 t. baking soda1/4 baking powder1 t. salt1/2 chopped nuts (pecans, walnuts)
Directions
Directions:
1. Preheat oven to 325. Grease and flour two bread loaf pans.

2. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla.

3. In a separate bowl, combine flour, cinnamon, soda, baking owder, salt and nuts. Stir into the egg mixture. Divide batter into prepared pans.

4. Bake for 65-75 minutes, or until done.

    I don't use oil though but I'm sure it's just as de-lish!
