Healthy Matzoh Brei

Ingredients
2 matzo1 cup liquid egg substitute (egg beaters)1 tbsp sugar4 cups water
Directions
Boil water.
Break matzoh into pieces into a colander.
Pour boiling water onto matzoh.
Mix wet matzoh pieces in a bowl with egg substitute and sugar.
Spray a non-stick fry pan.
Scramble up the egg and matzoh.

Makes 4 servings.
