Liz's Crock Pot Pulled Pork

Ingredients
Directions
5-6 pound pork tenderloin roast2 cups ketchup1 cup water1/2 cup apple cider vinegar1 Tbsp Worchestershire sauce1/4 cup brown sugar1/4 cup granulated sugar4 Tbsp Onion powder4 Tsp Dry mustard1 tsp fresh ground black pepperThe juice of 1 small lemon, about a tablespoon of juice1 Medium sweet onion sliced thin
BBQ Sauce:
1. Place all ingredients in a medium sauce pan.
2. Bring mixture to a boil then reduce heat to simmer.
3. Continue cooking, stirring occasionally until sauce thickens. About an hour.
* I make the sauce ahead of time and keep it in the fridge.
The Slow Cooker/Crock Pot-
1. Add Pork loin to crock pot.
2. Thinly slice 1 medium sweet onion and scatter over pork.
3. Pour half of the BBQ mixture over top and cook on low for 10- 12 hours.
* I usually serve this over half a baked potato with a side of steamed green beans and a salad. I reserve the other half of the BBQ sauce for another night during the week. Great on grilled chicken or steak too!
The nutrition info above is calculated for half of the BBQ sauce made and the whole pork loin as I reserve the other half of the sauce for another meal. Serve more sauce on the side if you like (my kiddos do).
Not the lowest in calories but it is a delicious treat and makes the house smell fantastic!! ;-)
