Ganache cake filling

8 oz bittersweet chocolate - I use good quality dark chocolate - like callebaut.1/4 cup butter1 cup whipping cream
place chopped chocolate in a stainless steel bowl
Heat 1/2 cup cream and butter in a large high sided saucepan until it just starts to boil, watch very closely as it will boil over very quickly.
Remove from heat and pour over chocolate immediately. Stir until chocolate is melted and smooth.
Place bowl in larger bowl with cold water and ice. Mix with hand mixer on high speed and add 1/2 cup cream slowly. Mix until mixture is soft and lighter color. It will become a bit fluffy.
Will make enough to fill 2 nine inch layer cakes. 1 8" and frost the outside.
