4 cups cut okra1 large vidalia onion, chopped2 large tomatoes, cubed (without skin)2T olive oilpepper1/2 Knorr vegetable buillion cube mixed with 1/2 cup water3 - 4 packets Splenda
Saute onion in olive oil until tender. Add buillion mixed with 1/2 cup water. Add okra and tomatoes. Pepper and 3 or 4 packets of Splenda. Cover and simmer about 45 minutes.
Serves 6.
