Milliebean's Chicken Stir Fry

Ingredients
3 boneless, skinless chicken breasts, sliced thinly1/2 red bell pepper, cut into chunks1/2 yellow bell pepper, cut into chunks1/2 green bell pepper, cut into chunks1/4 red onion, cut into chunks1 small head of brocolli1 carrot sliced diagonally1/2 cup chicken stock 2 tablespoons low-sodium soy sauce 2 tablespoons hoisin sauce 1 tablespoon brown sugar 1 teaspoon cornstarch 1 tablespoon water 1/2 teaspoon rice wine vinegar 1/2 teaspoon sesame oil 1 teaspoon ginger 1 teaspoon garlic powder1/2 teaspoon crushed red pepper
Directions
Spray pan with cooking spray. Fry chicken in until lightly brwned.

Add vegetables and saute until just tender.

In a small bowl, combine the stock with the soy sauce, sugar, cornstarch slurry, vinegar and sesame oil. Stir to dissolve the sugar.

Add the ginger and crushed red pepper and cook over high heat, stirring, until fragrant and golden. Add the stock mixture and boil over high heat until thickened and glossy, about 1 minute.

Serve over plain white rice.
