Crunchy Coconut Cereal

1 cup rolled oats or other rolled grain (not instant or quick oats)1 1/2 cups puffed whole grain (kamut, wheat, rice, etc)1 tbsp flax meal1/3 cup slivered almonds3 tbsp sunflower seeds1 1/2 tbsp extra-virgin coconut oil1 1/2 tbsp maple syrup or honey1/2 tsp maple flavoring extract1 tsp cinnamonpinch salt1/3 cup raisins or other dried fruit
Mix all dry ingredients but raisins on a lightly oiled cookie sheet with sides.
On a double boiler, melt coconut oil and syrup or honey together. Stir in maple extract and cinnamon and mix until well combined; pour over dry mix. Mix together well, then bake for 10-15 minutes, until golden brown. Remove from oven and stir in raisins.
Let cool completely, then store in airtight container or ziptop bag. This is really good stirred into homemade applesauce!
Makes 6 servings, about a heaping 1/2 cup each.
