Strawberry Love Muffins!

Fiber One Original Cereal crumbed Unsweetened Vanilla Almond MilkKing Arthur's 100% Whole Wheat Flour.old fashioned oats 1/2 cup1/2 Cup packed brown sugar1/2 Cup unsweetened coconut shreddedBaking Powder 1 tbspCinnamon 1 tbspSalt 1/2 tspEgg Beaters 1/2 cup1 tbs coconut oil1 tbs vanilla extract1/3 cup water
Preheat oven to 375.
Spray muffin cups with nonstick spray.
Mix almond milk and cereal and let soften for a few minutes.
Mix all ingrediants thoroughly EXCEPT strawberries and chocolate chips.
Fill muffin 12 muffin cups equally with batter. Insert 12 thawed and blotted dry strawberries upside down into the center (1 per muffin).
Use five chocolate chips per muffin and decorate around the center of the muffin.
There is a lot going on in this muffin. Adjust your calories and throw in nuts if you like. You can substitute your oil for what you have on hand such as vegetable, or canola.
I remember loving the center of my hostess cupcake and getting that grin when I got to the sweet center. This is my own grown up version of that. With the low calorie content these can easily be a grab and go snack or breakfast, and even a dessert! These are hearty and fun enough that your kids will love them as well! Please do yourself the favor of making a double batch or you will regret it! =)
