Spinach and Shrimp Linguini

1 pound Raw Frozen shrimp (thaw and peel before cooking)2 Bunches of fresh spinach1 large tomato (core and dice before adding to recipe)2 Tbs. Olive Oil1/2 box Ronzini Healthy Harvest Linguini1/4 cup Grated Parmesan Cheese1 tsp. Garlic PowderItalian Seasoning to TasteSalt and Pepper to Taste
Thaw and peel shrimp, core and dice tomato, and wash and trim spinach. Boil pasta according to directions while preparing the rest of the meal. In large skillet, saute shrimp in olive oil until done. Add spinach and cook with cover on skillet until wilted. Add diced tomato, garlic powder, and seasonings to taste (I use a LOT of salt free Italian seasoning blend). Cook covered for 1-2 minutes more. Stir in cooked and drained pasta. If the dish seems dry, add a drizzle of olive oil to moisten. Adjust seasoning as needed. Sprinkle with Parmesan cheese just before serving. Makes about 5 servings.
