1 lb 7% fat ground beef12 corn tortilla1 large can enchilada sauce8 oz 2% shredded cheese1 small onion chopped 1 small can mexican style diced tomatoes
Preheat oven 375 degrees
spray heated pan with cooking spray saute onion for a few minutes add ground beef breaking up and cook until no longer pink add 1/2 cup enchilada sauce and canned tomato continue to heat for a few minutes
pour 1/2 cup enchilada sauce bottom of baking pan layer with 4 1/2 tortilla place 1/2 meat mixture top with 1/3 cheese top with 4 1/2 tortilla top with rest of meat mixture 1/3 cheese top with balance of tortilla's balance of sauce and balance of cheese cover and bake 30 minutes uncover and continue to cook 10-15 minutes
