Easy Greek Chicken

Ingredients
4 boneless skinless chicken breasts2 garlic cloves crushed2 tsp VE Greek Seasoning2 Roma Tomatoes diced1 Small Red Onion1 Green Pepper Sliced1 Red Pepper Sliced1/2 cup of olives (optional)1 cup feta cheese
Directions
1. Preheat oven to 350 F (175 C)
2. Place chicken in a single layer in a glass baking pan. Layer ingredients over the chicken in the order listed above, ending with the feta cheese.
3. Bake covered for 20 minutes. Uncover and continue cooking for 15 minutes.

You may need to flip the chicken half way through.

    OMG This was REALLY good. I only used 1/2 cup of feta and served it with pasta using the juices as a sauce. I will definately make it again. - 7/8/09
