Roasted Red Bell Pepper Sauce

16 ounce bottle roasted red bell peppers1 small onion, diced2 pods garlic chopped 1 teaspoon olive oildash of salt2 tablespoons red wine vinegar1 tablespoon fresh lemon juicehot sauce to taste
Heat a 2 quart pot, add the olive oil.
Add the chopped onion and garlic and saute until tender-5 to 7 minutes. Add the bottle of roasted red bell peppers, juice and all. Add salt, red wine vinegar, lemon juice and hot sauce to taste. Cook until vegetables are tender, about 5 to 7 minutes.
Pour the mixture into a blender and blend until smooth. Taste and adjust seasoning if necessary.
Pour the sauce in a mason jar or other container and store in refrigerator for up to a week. Makes a good sauce to add to meats, vegetables, sandwiches, etc.
Makes about 2 cups.
