Max's Cabbage Casserole

* Cabbage, fresh, 4 cup, chopped * Carrots, raw, 1 cup, chopped * Onions, raw, 0.5 cup, chopped * Egg substitute, liquid (Egg Beaters), 0.5 cup * Milk, 1%, 1 cup * Swiss Cheese, 2 oz, grated * Parmesan Cheese, grated, 1 tbsp * Extra Virgin Olive Oil, 1 tbsp * Parsley, 1 tbsp
Saute cabbage, carrot and onions in 1/2 tbsp EVO.
Grease casserole dish with other half of the EVO.
Transfer vegetables to casserole dish.
Combing milk, egg and swiss cheese,
then pour over vegetables.
Top with parmesan and parsley.
Cook 30-35 mins at 350 degrees.
