Apple, Date, Oatmeal Muffins

Ingredients
1/2 Cup Chopped Dates1 Cup apple juice1 Cup Whole Wheat Flour1 Cup Oat Bran1/4 Cup Rolled Oats (or 7 grain cereal)1 Tbsp. Cinnamon1/4 Tsp. Nutmeg1/4 Tsp. Ginger1/2 Cup Vanilla nonfat Yogart1/2 Cup Sugar Twin1 Extra Large Egg
Directions
Preheat oven to 400 degrees

Combine dates and apple juice and let sit for 15 minutes.

Combine in large bowl dry ingredients, stir.

Combine Yogart, Sugar Sub, Egg with Apple Juice and Dates and mix well. Add this mixture to dry ingredients. Mix until just blended. Spoon batter evenly into 12 muffin cups. Bake 20 minutes, or until golden brown. Remove muffins from pan immediately. Muffins taste best when allowed to sit for 24 hours.
