Date Loaf

Ingredients

1 cup boiling water1 cup chopped dates1 tablespoon butter1/2 cup sugar1 egg1 teaspoon bicarbonate of soda1 cup white self-raising flour1 cup wholemeal self-raising flour
1. Preheat oven to 180deg Celsius
2. Prepare a loaf pan (I use silicon paper so I don't need extra butter)
3. Soak dates in boiling water
4. Cream butter and sugar
5. Beat egg and add slowly to butter and sugar, beating well.
6. Add soda to date mixture ten stir into creamed mixture
7. Stir in sifted flours until well mixed.
8. Place into prepared tin and bake for 30 minutes in the centre of a moderate oven.
I slice into 12 slices, and then cut each in half.
