Yummy Coconut Rice

Ingredients
3 cups uncooked long grain rice,basmati is best1 3/4 cups cocunut milk3 1/4 cups water1 tsp sesame oil3 tbsp brown sugar
Directions
Wash and soak rice for 30 minutes.
Strain and put in pot on stove. Add all other ingrediants and a pinch of salt(optional).
Bring to a boil. Stir. Cover and reduce heat to low.Let cook for 15 minutes. Remove from heat and let stand for 10 minutes. Do not remove lid until done standing.
Makes 9 1-cup servings.

    My family really liked this rice except for the sesame oil. My husband suggested next time to put in a little onion and nix the oil. I halfed this recipe becuase it makes a HUGE batch and there is just the 3 of us at home! - 12/29/09
