Hypatia's Zucchini Bread

Ingredients
2 Eggs1 cup Canola Oil1 cup Granulated Sugar1 cup Brown Sugar2 tsp Vanilla Extract2 tbsp Cinnamon, ground1 cup chopped Walnuts2 cups self-rising flour3 cups grated Zucchini, drained
Directions
Cream eggs, oil, sugars, grated zucchini, and vanilla in a large bowl. Add flour, cinnamon, and walnuts. Mix well, pour into loaf pans and bake at 350 degrees until the bread is firm and lightly browned (about 50 minutes). Removed from loaf pans and place on cooling rack until cool enough to store.

    My family loved it. It didn't rise well but it was delicious. We also tried it as banana bread (replacing zucchini with bananas) and that was delicious too. - 7/31/09
