Ingredients
# Onions, raw, 1 large (remove)# Olive Oil, 1 tbsp (remove)# Espresso (expresso), 50 grams (remove)# Pepper, black, 1 dash (remove)# Brown Sugar, 3 tsp unpacked (remove)# Pineapple, fresh, cubbed 250 grams (remove)
Directions
Cook onions in hot oil in a large skillet over medium-high heat, stirring often, 15 to 20 minutes or until onions are caramel colored. Stir in coffee and remaining ingredients, and cook, stirring occasionally, 5 to 10 more minutes or until liquid has evaporated.

    I am pleasantly surprised by its flavour. It went well with fried chicken breasts.

    I suspect that I used too much pineapple (I had no kitchen scale) so I added (2 tsp) extra sugar to break the bitter taste. That did the trick. - 2/14/12
