Carrot Kohlrabi Raisin salad

6 carrots, grated4 baby kohlrabi, grated4 tblsp mayo (or to taste)1 mini box of raisins1/2 apple, chopped1 tblsp sugar
Grate the kohlrabi and cover in salt, letting stand for 5-7 minutes (or while grating the carrots) to remove excess juices. Grate the carrots into a bowl. Squeeze the kohlrabi until dry, then place in bowl with carrots. Peel, core & chop the apple into the bowl. Add raisins & mayo. Mix. Omit sugar if using MiracleWhip or dressing as opposed to mayo.
Makes about 6 servings of about 1/2 cup each.
