1 medium sliced zuchinni, about 1 cup.1 medium sliced yellow squash, about 1 cup.1 medium vidalia onion, sliced, about 1 cup.1/4 tsp pepper1/4 - 1/2 tsp garlic salt (california style with parsley)2 tbsp olive or smart balance oil
Slice zuchinni, squash and onions into uniform 1/8" thick slices. Preheat large deep skillet with olive or smart balance oil at medium heat. Add zuchinni, squash and onions and stir occasionally while cooking approximately 20 minutes, until squash and zuchinni are soft and clearish. You can let the mix brown a little to camelize the veges. Serve warm. Makes 3 1-cup servings. Refrigerated leftovers can be eaten cold.
