Quick and yummy Southwest chicken

3 chicken breasts (Give or take) 4 cups Salsa 1 can Yellow sweet corn drained1 can black beans6 servings of rice already prepared
Chunk the chicken and cook in a large pan
Add the salsa, corn, and the beans, cook till it is all hot and serve over rice.
You cant mess this up.

Yummy that sounds good, my 3 year old wont eat any thing unless it is wrapped in a tortilla shell. Then I leave out the rice. I didn't think to a cheese and sour cream, you would think that would be a given. Thanks.

If corn doesn't work for you I am sure you could substitute it with some thing, it is very versatile.

I cooked this tonight and the three of us L O V E D it. I used two bags of Boil in a Bad and added it to the pan 30 mins into cooking. Also deleted any cheese and included one can of mixed veggies to the variety of flavor. Seasoned the chicken a little to much but but the "kick" came from the salsa. - 6/9/10
