Greek Lemon Chicken Thighs and Potatoes

1 cup fresh lemon juice1 cup fat-free chicken broth2 Tbsp Olive oil8 Medium Garlic Cloves4 Tbsp Dried Oregano3 pounds boneless skinless chicken thighs (about 16 thighs)1 sparys of cooking spray1 pounds uncooked new potatoes cut in half about (10 small potatoes)
Makes 8 Servings
Place Lemon Juice, broth, oil , garlic and oregano in a large resealable plastic bag or large glass bowl. Add chicken, seal or cover, and marinate at least 2 hrs or up to overnight in refrigerator.
Preheat oven to 350 F. Coat a 9 x 11 in pan with cooking spray
Place chicken and marinae in pan: add potatoes. Bake 60 minutes, or longer for softer potatoes. Yeilds about 2 chicken thighs and 3 potatoes per serving.

This recipe has way too much lemon! The flavor is overpowering and needs to be toned down a bit. Also, I found the potatoes soggy. The marinade has too much liquid. Less lemon juice and chicken broth will give this dish a more roasted, rather then braised finish. That is my plan next time. - 2/18/13
