Colorful Chinese Pork Fried Rice

Ingredients
Ingredients:1-1/5 cups Uncle Ben's Whole Grain Parboiled Brown Rice1-1/2 cups Uncle Ben's Original Enriched Parboiled Long Grain White Rice2 large Eggs1 Egg white2 Tbsp Olive Oil (light, virgin)1-1/4 cup chopped Onions1 lb Pork chops (boneless, about 4)2 packets Fried Rice Seasoning Mix16 oz bag PictSweet Peas and Carrots4 Tbsp La Choy Lite Soy Sauce
Directions
Cook rice(s) according to directions (I use a rice cooker) Let cool.
"Scramble" eggs until just loses it's gloss, set aside.
Cut pork chops into small, bite sized pieces. Heat skillet, add pork and cook until white (cooked throughout) Move meat to a dish. In same pan pour in olive oil and "stir fry" (that just means to heat!) cooled rice with onion until onion just loses it's "crunch".
Mix in Fried Rice Spice, add soy sauce and mix until well blended. Add in pork & eggs, gently stir in peas & carrots.
Serving size = 2 cups
