Bacon Wrapped Chicken with Asparagus

Ingredients
Boneless Skinless Chicken Breast (1 per person)Cream Cheese (Can sub light) - about 1 tbsp per personAsparagus - 4-5 spears per person)Turkey Bacon - 1-2 slices per personApricot Jam/Preserves - 3 tbsp per 6 servingsLemon - Juice from 1/2 LemonExtra Virgin Olive Oil (EVOO) - 1.5 tbsp total
Directions
Prep Asparagus - Clean spears and trim. Boil salted water in small skillet. Add Asparagus and boil for 2 minutes. Drain and rinse with cold water to stop cooking. Drizzle with Olive Oil & salt/pepper to taste.

Heat Grill to Medium, about 375

Prep Chicken - Pound breast to make thin & easy to roll. Place a chicken breast on clean surface, add about 1 tbsp cream cheese to one end. Place Asparagus on cream cheese and roll breast as tight as possible. Keep secure by wrapping 1-2 slices of bacon around rolled breast.

Prep sauce - Mix 3 tbsp Apricot Jam, Juice from 1/2 Lemon & about 1 tbsp EVOO

Cook Chicken about 3 minutes on all 4 sides, until Bacon looks crisp. Baste with Apricot Sauce while cooking. Add sauce each time you turn the chicken.

Recipe is for 1 serving, but is easy to adjust. The sauce makes enough for about 6 servings.
