Tuna Tomato Casserole healthified

1 6 oz. can tuna drained1/2 c reduced fat mayo1/4 c finely chopped onion1/4 tsp. salt1/4 tsp. black pepper6 oz whole wheat wide egg style noodles4 Plum tomatoes sliced 1/4 in. thick1/2 c 2% fat finely shredded cheddar cheese
Makes 4 servings from an 8x8 baking dish.
Preheat oven to 375
Combine tuna, salt, pepper, onion and mayo in bowl- set aside
Prepare noodles (use package directions) cooking until just tender. Drain noodles.
Combine tuna mixture and noodles until well blended
Layer 1/2 the noodle mixture, 1/2 the tomato slices and half the cheese into baking dish. Press down slightly.
Repeat layers with remaining ingredients.
Bake 20 minutes or until casserole is heated through.
