Simple Granola

Ingredients

1/2 cup honey1/2 cup extra virgin olive oil2 tsp. vanilla extract1 tsp. cinnamon8 cups regular rolled oats
Preheat oven to 300 degrees.
With a wire whisk, thoroughly blend honey, oil, vanilla, and cinnamon. Stir in oats.
Spread evenly in baking pans. I prefer two 9''x13'' baking pans, but you can use cookie sheets or whatever.
Bake at 300 for 20-30 minutes, stirring well every 10 minutes.
Makes 16 servings 1/2 cup each.
Store in tightly closed container.
Special tip: Granola will continue cooking after removal from oven and will crisp as it cools. Do not over bake it. Time for baking may vary depending on quantity prepared and size of baking pans. This granola is minimally baked to reduce loss of Vitamin B-1. Granola is a rich food. Consider serving a small amount over hot cereal, yogurt, or fruit for crunch, rather than eating an entire bowl of it. Olive oil does not have a taste when baked.
