Yellow Squash Cassarole

Ingredients
Yellow Squash, 2 cup Green onions 2 stalksCream Cheese 1/3 less fat 2 oz Wheat Thins 5 grain fiber select 16 crackers (crushed)parmesan cheese 2 Tgarlic powderBlack pepper
Directions
Cut squash and onions, boil together until they are soft. Drain off water and add garlic, black pepper, cream cheese and crackers. Bake for 10-15 minutes. @ 350. Top with parmesan cheese.

    This was really good. However, the next time I would peel the squash. The peel came out tough. This amount could also feed 4 people. - 8/28/09

    Thanks for the comment...I love squash no matter how its cook. But yeah if I use larger squash it does tend to be a bit tougher.
