Tabbouleh Cheese Salad

Ingredients
1 c. uncooked bulgarBoiling water6 oz (1 1/2 c) Asiago cheese, shredded4 oz fresh snow pea pods, tips & strings removed, cut in half1 medium ripe tomato cubed 1/2-inch1/4 c. lemon juice2 Tbsp red onion, chopped2 Tbsp olive oilparsley, dried or fresh (optional)
Directions
1. Rinse bulgar. Pour boiling water over bulgar. Cover & let stand for 1 hour. Bulgar should be soft & chewy. Drain.
2. In a salad bowl combine bulgar and all remaining ingredients; toss well to coat. Cover; refrigerate 30 minutes.
