Creamy Reduced Fat Potato Salad

5 lbs. red potatoes1 small onion, diced fine1 c. celery, diced fine4 eggs, hard-boiled & chopped fine3-5 cloves garlic, minced (use more or less according to personal preference)1/4 c. sweet pickle relish1 c. Hellman's Light Mayonnaise1 c. light sour cream3 T. yellow mustard3 T. apple cider vinegar or white wine vinegar3 pkts Splendasalt & pepper to taste
1. Wash potatoes, cut in half or quarters, boil until soft, approximately 20-30 min, drain & cool.
2. Combine rest of ingredients, mixing well.
3. Once potatoes are cool enough to handle, cut into bite-size pieces and place in large bowl.
4. Add dressing and mix gently.
5. Refrigerate for at least 2-3 hours before serving.
